Lesson Objective

Students will differentiate between saturated, unsaturated, and trans-fatty acids and describe their physiological functions.

Why are unsaturated fats usually liquid at room temperature while saturated fats are solid?

saturated, unsaturated, triglyceride, trans-fats

3.12.4 Use valid and reliable sources of health information, products, services, and other resources.

(DOK 1) List three functions of fats within the human body.
(DOK 2) Compare the chemical structure of a monounsaturated fat to a polyunsaturated fat.

Not all fat is "bad." Fats provide the cushion for our internal organs and allow us to absorb vital vitamins. Learning to choose unsaturated "heart-healthy" oils over trans-fats is one of the most significant long-term health decisions a person can make.

Fats are bad for you

Use skeleton outline
Use of computers
Use graphics/posters/pictures

"Label Detective" – Students must find and highlight "hydrogenated" oils in ingredient lists and explain their impact on health.

Samples of various oils (olive, canola, lard), "Chylomicron" models, nutrition labels.
