Unit 10: Cake and Frosting
Duration of Days: 10
Students will know the function of ingredients to produce cakes and icings. Students will know the methods of mixing a variety of cakes and icings. Students will know how to identify the tools and equipment used to assemble and decorate cakes. Students will know how to frost and decorate cakes and cupcakes.
Students will prepare a variety of shortened cakes with the creaming method and unshortened cakes with whipped-egg foam cakes. Students will prepare various frostings. Students will practice frosting and piping techniques.
Students will demonstrate their learning by preparing a variety of shortened cakes with the creaming method and unshortened cakes with whipped-egg foam cakes. Students will select cake and frosting recipes to create a shopping list. In small groups, students will produce a cupcake for a competition. Students will individually frost and decorate a mini cake. Students will self and peer critique the cake and frosting throughout the unit.
